Peanut Butter Chocolate Chip Cookies (w/Recipe!)

Alex and I recently made a batch of cookies - Peanut Butter Chocolate Chip.  The last "batch" ended up being one monster-sized cookie.



The recipe is simple and they bake in about 8 minutes (even the big one!).  We hope you enjoy this recipe as much as we enjoyed eating them.

Peanut Butter Chocolate Chip Cookies
(A slightly modified recipe from Confetti Peanut Butter Cookies from the book Cookies!)

Ingredients

  • 1/2 C creamy peanut butter
  • 1/2 C granulated sugar
  • 1/2 C packed brown sugar
  • 1/4 C butter, softened
  • 1/4 C vegetable shortening
  • 1 egg
  • 1 1/2 C all-purpose flour
  • 3/4 tsp baking soda
  • 1/4 t salt
  • 3/4 C chocolate chips


Directions

  1. Preheat oven to 375 degrees
  2. In a large mixing bowl (I used my Kitchenaid with the paddle attachment), beat together peanut butter, sugars, butter, shortening, and eggs on medium speed until light and fluffy.
  3. Add flour, baking soda and salt.  Beat at low speed until soft dough forms.
  4. Stir in chocolate chips.
  5. Shape dough into 1" balls, place on an ungreased cookie sheet 2" apart.  Using a fork, flatten the balls making a cross-cross pattern.
  6. Bake cookies for 8 - 10 minutes or until light golden brown.
  7. Allow the cookies to cool before storing.  Enjoy!
