2nd Mo. Dr. Checkup & What's for dinner?!?!?!

Hi All!  I've been slacking again on the blog front- but honestly, I've been super busy! 


Yesterday Jacob had his 2-month doctor's appointment.  He's looking great!  His weight is 15lb, 10oz (off the charts!) and his length is 23-3/4" (90th Percentile).  His head grew from the 50th percentile to the 75th. He is a big boy!  


I also decided to only buy groceries for the menu I've prepared for the week (except fruits and veggies for snacking, of course!).  So after 3 stores yesterday, we're fully stocked for yummy goodness.  Last night we had a pasta with chicken, spinach and feta.  I decided to share it with you guys - it was yummy!


Wanna know how to make it?  It was simple...  I added the recipe below!  For Dessert I bought 8 different apple varieties.  In my house when you ask someone what type of apple they like, the answers you hear are "the yellow ones" or "the red ones".  UGH!  Do you know how many RED and YELLOW varieties there are?!?!?!  So I bought a bunch, sliced them and numbered them for blind taste tests.  It turns out that everyone really likes Pink Ladys and Galas.  Next up were the Honey crisps, Braeburns and Golden Delicious apples.  Now we know!  The leftover slices were drizzled with honey and blue cheese.  Yummy again!


I love the colors - but the taste is even better!


Yummy Pasta w/Spinach & Feta

Ingredients:

  • 1 box of Whole Wheat Mostaccioli or Penne Pasta
  • 2T olive oil (I used basil-infused olive oil)
  • 1/2 yellow onion, diced
  • 3 garlic cloves, minced, add more if you like lots of garlic! (We love garlic, so more was added!)
  • 1 chicken breast, cooked & diced (boil, pan fry or use rotisserie - your choice!)
  • 1-1/2 C sliced mushrooms
  • 1 bag fresh spinach
  • 1 28oz Can whole Roma tomatoes, drained & coarsely chopped (or 3 C fresh, chopped tomatoes)
  • Salt, to taste
  • Red Pepper Flakes, to taste
  • 8-10oz Feta Cheese


Directions:

  1. Boil water, add salt and cook the pasta as indicated on the box.  
  2. Meanwhile, in a large fry pan, heat the olive oil on medium-high heat.  Saute onion and garlic until translucent and just about starting to brown.  Add chicken and continue to saute about 30-60 seconds to incorporate flavors.  Add tomatoes and mushrooms and saute for a minute.  Add spinach, season with salt and red pepper flakes.  Continue to saute until spinach is wilted.  DON'T FORGET TO TASTE YOUR SAUCE AND ADJUST SEASONINGS AS YOU FEEL IS BEST.  ALSO, DON'T OVER-SALT.  TASTE YOUR FETA TO SEE HOW MUCH SALT THERE IS IN THE FLAVOR BECAUSE YOU'RE ABOUT TO ADD IT TO THE MIX!
  3. If your pan is large enough, add the feta to the mix and the noodles.  Toss to mix thoroughly.  If the pan isn't big enough, mix it together in your pasta pot.  
  4. Enjoy solo or with some garlic bread and side salad.
