Cook Yourself Thin during Lent

Have you ever seen that show Cook Yourself Thin?  If you haven't, click here and check out what myLifetime.com has to say about it.  I first seen the show about a year and a half ago and immediately went out and bought the cookbook.  While it's not perfect (lacks nutritional info required by many people and diets), the recipes are 1.) easy; 2.) tasty; and 3.) better for you.  Back then I decided to cook all of our meals from that little white book and after a week, I had lost weight.  It was heavenly - yummy food and less calories.  What more could a girl ask for?

OK, forget that last questions - there is SO much more that I could ask for. :)

Anyway, back to my point.  It's Lent, which means for my household meat is a no-no on Fridays.  I pulled out my little white book and decided to cook my family thin with the Sesame Peanut Noodles dish.  It's a meatless delight full of flavor.  Now, I've made this before, so I modified it to my liking.  For the recipe, click here.

Yum!  This dish is very flavorful and leaves me satisfied every time!
My modifications for the dressing included using a grape seed oil instead of sesame, simply because I was completely out of sesame and had a ton of grape seed oil.  I'd normally use sesame though.

Another modification was that I did not include the chopped red pepper or jicama.  I didn't have the pepper and I don't care for the jicama.  I just add twice as much julienned apples instead.

I use over sized bowls.  This bowl is about 10" - 12" in diameter.
If I had a tape measure, I'd give you an exact number.  But I don't.
The beauty of this dish is that you can put whatever nutritious goodies you like in it.  The peanut sauce is dee-lish.  I love the acidic vinegary flavor that mixes with the smooth, velvety peanut butter.  Even my skeptical mother enjoyed this dish.  So if you're looking for something meatless today - or any day - I recommend this dish.  Bon Appétit
