Hola Randomly, Jennifer followers! :) The heaviest news I have from Tuesday night is Jacob's new weight. Mind you this child will be 3 months on Saturday. He weighed in at a whopping 19lbs, 6.4oz! So if I complain of backaches already, you know EXACTLY why! The little (big?) guy is doing great. He's smiling, cooing and likes to make tiny rabid bubbles at his lips. In fact, he's sitting at the dinette table talking, bubbling and hiccuping all at once. What a talented baby! LOL ;)

So yesterday I wrote about the dinner we were having (click here for the blog entry). We made Chicken Marsala, Italian seasoned rice and Giada de Laurentiis's Spicy Parmesan Green Beans and Kale. By "We", I mean the hubby and I. Yes, we found the time to cook the whole meal together. He rocked. :) I did most of the prep of the veggies, he gathered the ingredients. I made the green beans and kale, he prepared the chicken. The rice was a group effort (I made the rice and chopped the goodies... he put everything together). It was actually just our immediate family for dinner (Adolfo, Alex, Jacob and myself). Alex had eaten while we ran errands, so essentially, just the two of us sat down for dinner. What an unusual evening! Anyway, everything was so yummy that when I plated the dishes, I went a little overboard:

I wish I could say I didn't finish
EVERYTHING on my over-stuffed plate, but that would be a lie. I actually had seconds of the veggies - which were yummy!!! I definitely recommend Giada's recipe, it was easy, relatively quick (20 minutes), and tasty. Tonight is pasta night... can't wait.
Oh, and check this out - the dinner we had was packed with fresh veggies - onion, green beans, kale, fresh spinach, garlic, red pepper. I'm feeling healthier already (despite the olive oil to fry).
In the meantime, I need to prepare for a test I have to complete for my Sociology course before the end of the week. I have a lot of reading and approx. 20 essay questions to do, plus vocab. So if I don't blog (which I technically shouldn't be doing), I'm doing homework. Or so I hope. In case I don't "see" you for a few days, take care and...
